5 things you can do with unsweetened (non-sucré) lait caillé:
1. Add a small spoonful of jam for a sweet snack.
2. Use in place of buttermilk in recipes. (Especially good for recipes using whole wheat.)
3. Strain in a coffee filter for 2-3 hours to make Senegalese-Greek Yogurt.
4. Keep straining for another couple hours (until firm) to make Senegalese Sour Cream.
5. Use the whey from numbers 3 and 4 in place of water when making bread dough.


I had forgotten about lait caillé. What a great idea to strain it to make yogurt too.
